WHITE TRUFFLE - Tuber Magnatum Pico
The white truffle is considered the truffle par excellence.
Its smooth surface is yellow ocher or olive yellow.
The flesh is yellowish white with brownish shades, varying in relation to the maturation, to the type of soil and to the plant with which the truffle lives in symbiosis.
For example, truffles that are born close to an oak have a hazel glebe, while those who grow close to the beech, are reddish.
It has a particularly strong and distinctive scent.

BLACK TRUFFLE - Tuber Melanosporum Vitt
The black truffle, also called truffle of Norcia, truffle of Spoleto or "truffe de Perigord", has a rather smooth and round surface with polygonal warts.

This truffle has organoleptic qualities similar to the fine white truffle.

SUMMER TRUFFLE - Tuber Aestivum Vitt
The summer truffle has a surface presenting blackish brown pyramidal warts. It has a strong aromatic scent.
